BELLINGHAM, WA — A new restaurant is preparing to take over a prominent Meridian Street location in Bellingham, as El Botas Restaurant & Bar moves forward with plans to open at 4451 Meridian Street, a site currently occupied by Jalapeños.
The transition signals a potential change for the well-known location, though an exact timeline for when Jalapeños will vacate the space has not yet been publicly confirmed. Bellingham Metro News has not yet spoken with Jalapeños management regarding the status of the location or any future plans, including whether the restaurant may relocate elsewhere.
According to information shared with Bellingham Metro News, the move is part of a broader effort to expand El Botas into a larger and more accommodating space. The daughter of the owner told BMN that the decision came after an opportunity arose to sell their previous location and move into a bigger property, allowing the business to continue growing.
She explained that the goal behind the move is to create a more spacious environment where customers can gather comfortably. With additional room, the new location is expected to better accommodate families, friends, and larger groups, while maintaining the core identity of the restaurant.
The previous El Botas location has already transitioned into a new business. The site is now operating as El Manguito Mexican Cuisine, reflecting ongoing turnover in Bellingham’s restaurant landscape as businesses expand, relocate, or rebrand.
At this stage, many details about the new Meridian Street location remain limited. The daughter of the owner noted that she is currently out of the country and has not been closely involved in recent day-to-day developments, but plans to return soon and provide more information as plans are finalized.
Early social media activity tied to the business suggests the restaurant may aim to open in early June, potentially with live banda music as part of its opening atmosphere if timelines stay on track. As with most restaurant openings, that timeline may shift depending on final preparations.
The Meridian Street move reflects a larger pattern seen locally, where Jalapeños restaurant spaces have transitioned into new concepts. In Fairhaven, a previous Jalapeños location later became Tacos Guadalajara, highlighting continued changes within established restaurant sites across the city.
