LYNDEN, WA — A new dining option is preparing to open its doors in Lynden, as Rustic Bar & Grill is set to launch inside the Cobblestone Hotel along Guide Meridian. According to information provided to Bellingham Metro News, the restaurant is currently aiming for a mid-May 2026 opening.
The upcoming location will mark the third restaurant in Lynden under the same ownership group. Their first venture, Rusty Wagon on Hannegan Road, introduced an old-time style dining concept to the area, followed by Rustlers Front Street Grill in downtown Lynden, which operates as a bar and grill in the city’s core. Rustic Bar & Grill will expand that footprint to the west side of town along Guide Meridian, bringing a new concept to a growing strip.
Co-owner Kevin Seutz told Bellingham Metro News that the opportunity came after the Cobblestone Hotel ownership group reached out, leading to discussions that ultimately developed into a partnership both sides believe will benefit the business and the community.
While connected to an already established group of restaurants, the new Lynden location is not simply a repeat of what already exists. Seutz said the new concept is being developed with a different direction, describing it as “upscale casual,” with the goal of offering a more refined dining experience while still keeping pricing within reach for local residents and travelers staying at the hotel.
Plans for the menu reflect that shift. The restaurant is expected to feature offerings that differ from what is currently served at the group’s other locations, giving customers something new while maintaining an approachable feel. The intent is to balance elevated dining with everyday affordability, appealing to both the local community and out-of-town guests.
The setting is also being designed with a specific atmosphere in mind. Seutz said the focus is on creating a warm and welcoming environment, with decor and layout intended to give the space a comfortable and inviting feel. Details from the restaurant’s website point to a cozy interior, an emphasis on hospitality, and a well-rounded dining experience that brings together food, drinks, and atmosphere.
In addition to indoor seating, plans include outdoor patio space, allowing guests to dine outside during favorable weather. The concept also includes craft cocktails and a menu that blends traditional flavors with updated approaches.
Staffing is already being assembled ahead of opening, with both front-of-house and back-of-house teams coming together as preparations continue.
The restaurant will be located at 8155 Guide Meridian Road in Lynden, directly within the Cobblestone Hotel property. Its location along a busy corridor is expected to draw a mix of local traffic and visitors traveling through the area.
Seutz said the team is looking forward to welcoming guests and bringing something new to the Lynden community as opening day approaches.
As construction and final preparations continue, more details about the official opening date and menu are expected to be released closer to launch. For now, the mid-May target provides a general timeline as the project moves toward completion.
